Rolls Ups with Cheesecake Filling and Chocolate Protein Icing
(These work great as a snack, a breakfast, a late night snack, or before workout snack)
Using a JRE pancake, fill with either of the following fillings, roll up and munch.
One pancake roll up equals approximately 100 calories
4 oz low fat cottage cheese
2 oz low fat cream cheese
1/2 tsp lemon zest
1 tsp lemon juice
Mix together and use as spread or filler
Chocolate Protein Icing
2 scoops Ultimate Muscle Protein Powder (some protein powders mix differently)
1/2 cup egg whites
2 packets sweetener
Blend egg whites until frothy. In another bowl mix dry ingredients. Slowly add dry mixture to wet mixture. Add a small amount of water if you would like a different consistency.
Use as spread or filler.
PB2 and Banana Stack
1 stack of JRE pancakes (4 pancakes)
2 tbls PB2 (can be purchased from JRE or online) PB2 is a non-fat powdered form of peanut butter2
tbls of PB2 = 45 calories - perfect replace for full fat peanut butter
Spread 1/2 tbls in between each pancake and on the top pancake. Slice banana and place on the top pancake. Eat up!
Pancake with Yogurt and Fruit
1 stack of JRE pancakes (4 cakes)
4 oz Kroger Carb Master Yogurt
1/4 c fruit of your choice i.e. strawberries, blueberries, raspberries, cantaloupe, etc.
1 stack JRE pancakes (4 cakes)
¼ cup Joseph’s sugar free maple syrup
Top stack with maple syrup and dig in!
1 JRE pancake
1-2 tbls chocolate protein icing
1-2 tbls fat-free Cool Whip
1 sliced strawberry
Spread chocolate icing on top of the pancake, then Cool Whip, then place strawberries.
